A lot of times we get stuck in a rut when it comes to feeding our families. We eat the same cereals, sandwiches, & pasta dinners over & over b/c they are simple & our brain power is going to a million other things.
So here are 3 easy breakfasts that you might not have heard of…
1. Brown Butter Cinnamon Sugar Toast
I actually came across this delicious recipe in a Nicholas Sparks book (I forget which one)! The handsome, romantic man was cooking breakfast & his simple recipe sounded perfect.
Make toast, brown butter in a pan, spoon browned butter onto toast, sprinkle cinnamon sugar on top.
That’s it! Super easy to make, but it tastes amazing…
2. Cream Cheese Tomato Bagels
This one was introduced to me at a play date with a dear mom friend. It was a unique twist on a breakfast staple.
Toast an everything bagel, spread cream cheese, put tomato slices on top (my favorite are cherry tomatoes).
I have a feeling that some of you might be familiar with this awesome “recipe,” but it is worth putting into the breakfast rotation if you have forgotten about it.
3. Oven Bacon & Eggs
I love bacon (I know. We all do.) I love hard boiled eggs. But they are such a pain to make! It can be so hard to get them right, & cooking bacon is just downright messy. Unless you cook it in the oven!
Line baking pans with aluminum foil, lay bacon on the foil, cook in oven at 400 for 15-20 minutes. It doesn’t splatter & gets that perfect mix of tenderness & crispiness.
Put eggs into muffin tins, cook in oven at 325 for 30 minutes, put in cold water for a few minutes. Enjoy throughout the week.
This way you can have a filling, delicious breakfast any morning of the week. You can make them ahead of time. You can use them for lunches (egg salad sandwiches, BLTs, etc)
